My sister Rhonda is an excellent cook and baker. I always call her with a cooking question. She makes everything look and seem so easy, and it usually is. She is all about shortcuts. This dessert has been served at countless parties at her house, and this weekend it was a served at our first Saturday Nite Fish Fry…and not a drop of it was left! Her husband, and his diabetes, can vouch how yummy it is.
Aunt Rhonda’s White Trash Yum-Yum (this is the name we gave it)
- 1 1/2 cup flour
- 3/4 cup margarine butter, softened
- 1/2 cup chopped pecans, extra sprinkle for top
- 8 oz softened cream cheese
- 1 small tub cool whip
- 1 cup powdered sugar
- 1 small package vanilla pudding
- 1 small package chocolate pudding
- 3 cups COLD milk
- chopped up choco-chips for sprinkle on top (optional)
FIRST LAYER: With hands, mix flour, butter and pecans. Spread onto bottom of 9 x 12 casserole dish, pressing firmly for dough to cover only bottom of dish. Bake at 350 degrees for 20-25 minutes. Let cool.
SECOND LAYER: Mix cream cheese, 1 cup cool whip and powdered sugar. Spread over cooled crust.
THIRD LAYER: Mix chocolate pudding, vanilla pudding and milk together; spread over second layer. Top dessert with remaining cool whip. Sprinkle with pecans and chopped choco chips if you want!

Eat it in your mouth. Think of the possibilities of this recipe! I want to try a tropical version somehow mixing pineapple into the cream cheese mix……
